Crispy Cassava Fries Ingredients
250 g cassava, peeled and cut into chunks½ cup cornstarch1 egg½ tsp salt¼ tsp ground black pepperCooking oil, for deep fryingProcedure
1. Boil the cassava until very tender. Drain well and remove the fibrous center.
2. Mash the cooked cassava until smooth.
3. Add cornstarch, egg, salt, and pepper. Mix thoroughly until well combined.
4. Transfer the mixture into a piping bag fitted with a large star or round tip.
5. Heat enough oil in a pan over medium heat.
6. Pipe the cassava mixture directly into the hot oil, cutting each piece to your desired length.
7. Fry until golden brown and crispy, turning occasionally for even cooking.
8. Remove and drain on a paper towel or wire rack.
9. Serve hot with your favorite dip or sauce with a cup of tea.
